A healthy yet delicious cake 22-01-2019

If you have made yourself a new years resolution to eat better and start snacking more appropriate like me, then boy do I have a treat for you!
This super tasty yet easy cake will let you indulge yourself without feeling guilty afterward.
Firstly what I hate about following recipes is this.
When you bought all the ingredients from the list, and you are one tablespoon of flour away from starting your cooking. To then find out what other utensils you had to have bought in your house beforehand.
I mean, sometimes one does not have salt in their house and then when your halfway up to your elbows in the cake batter, one gets frustrated because no-one told ONE we need salt for this cake!
So let me humor you:
Here is an everything (really everything) you need list!
-Three bowls
-A cake mold -Whisker
-Oven
-Something to zest your lemon with (I would use a grater but of course, by all means, be creative!)
Ingredients:
-4 eggs
-1 Lemon (bio cause you’re gonna need the skin right)
-1/4 Tsp cardamom powder
-100 g coconut flower sugar
-170g almond flour
-1 tsp baking powder
– Pinch of salt
– Oil, coconut oil or butter to grease up your cake meld
Aaaaand were all set, let’s start baking!
First things first we need to warm that oven up till 350 F (175 C).
While its warming up split the eggs so that you have the egg yolks in one bowl and the egg whites in another bowl.
Since we are all about preparation, also split the 100 grams of coconut sugar in half and divide it over again two separate bowls.
Grate the lemon till the point that you have about 2 tablespoons of lemon zest.
Then we mix the egg yolks with the lemon zest and 50 grams of the coconut sugar.
In another bowl, we add all the dry ingredients such as the flour, baking powder, cardamom and the pinch of salt.
Take your third bowl and whisk the egg whites together with the other 50 grams of sugar until you have a nice white fluffy consistency.
Add now the egg yolks with the dry ingredients and mix it all together.
Now for the most important part, gently fold into this mixture the stiffly beaten egg whites so you end up will the nice smooth cake batter.
Pour this into your greased up cake mold and put it in the oven for about 34 min.
TIP: Every oven has its own personality, so keep checking on your cake after about 20 minutes.
Most handy thing to see if the cake is done is to stick a toothpick or wooden skewer in the cake.
If it comes out clean, your cake is done!
If there is still some cake residue on the stick leave it in a little longer.
And voila! Enjoy your healthier version of a damn tasty cake!
